base layer is an chocolate apple sponge, 2nd layer is a chocolate mousse, 3rd layer -  caramel mousse. And wrapped around the cake (as seen on 1st picture) is a jaconde sponge decorated with tuille paste. cake 1 is covered with white chocolate ganache and 2nd cake is covered with chocolate ganache
